Description
- The cheese vat is use for preparation of various type of cheese such as, Cheddar cheese and Mozzarella cheese.
- Closed double zero curdling vats for capacities of 6,000 liters.
- Designed to obtain the best results in any type of cheese.
- It has a heating system that distributes the heat evenly throughout the curd.
- Thanks to the precise cutting and agitation unit, it is possible to obtain a grain of a highly uniform size and to reduce the forming of fines to a minimum
- The Vat will consist of following specification:
- The module is design for coagulation, cutting and cooking of cheese grain.
- Vertical cheese vat with double o shape frame.
- The construction is hygienic and designed in Stainless Steel to be cleaned in place.
- The PLC based electronic control of the production sequence ensures the repeatability for product consistency and integrity - whilst maintaining an appropriate level of operator input at key stages.
- The electronically speed controlled agitators stir the curds in the forward direction and cut in the reverse direction.
- The operator control panel may be mounted adjacent to the Vat or directly on the Vat close to the Lid and the Safety Grid.
- Heating is by live steam/Hot water into the vat bottom & shell.

Steel (AISI 304) 250 mm dia air vent to prevent formation of partial vacuum during CIP and pressure during filling.
Thermo-well and RTD
200 mm long stainless steel (AISI 316) inclined pocket suitable for mounting suitable type digital thermometer.
Outer Shell MOC

Lifting lugs
12 mm thick Stainless steel (AISI 304) lifting lugs will be provided at top. – 4 nos.
Manhole
Easy for a man to enter inside the vat and clean. The lid of the manhole will be designed with interlocking to prevent physical hazards.
Finish
All welding joints are to be ground smoothly. All stainless-steel surfaces are to be polished to 150 grits.
Sand Blasted level marks
It will be calibrated at 500 L intervals and provided on the inner shall at opposite side of the manhole.
Insulation
The Intermediate bottom shall be insulated with 50+50 mm thick resin bonded Glass wool having density 24 kg/m3 applied along with Aluminum foil. The Inner shell shall be insulated with 50 mm thick resin bonded Glass wool having density 24 kg/m3 applied along with Aluminum foil. The outside of side wall of inner, bottom of jacket and inside of cladding shell & Bottom will be coated with 2 coats of bituminous paints.
